To prepare potato samosas, combine flour, carom seeds, salt, clarified butter, and water in a mixing basin. In a pan, heat the oil and add the cumin and coriander seeds. Then, in it, cook onions. Cook the potatoes, green chillies, spices, and coriander leaves in the pan. Fill the dough with this mixture and close it in a triangular form. Cook till golden, then serve.

  • 1 cup All Purpose Flour
  • ½ tsp Salt¼
  • ¼ tsp Carom Seeds
  • 1 tbsp Clarified Butter
  • 4 cups Oil
  • ¼ tsp Cumin Seeds
  • ¼ tsp Coriander Seeds
  • ½ tsp Cumin Powder
  • 1 Chopped Onion
  • ¼ tsp Red Chili Powder
  • ¼ tsp Coriander Powder
  • 2 Boiled Potatoes
  • 2 Chopped Green Chilies
  • 1 tsp Finely Chopped Coriander Leaves

INSTRUCTIONS

Making of Dough

  • Add all-purpose flour to a mixing basin. Add 12 teaspoon salt, carom seeds, and 1 tablespoon clarified butter to it, along with little water. Knead the dough until it is smooth.
  • Make a large ball and roll it in. Put it in a bowl and cover it with a lid. Set aside for around 20 minutes.

Preparation of Filling

  • Heat the oil in a skillet, then add 14 teaspoon cumin seeds and 14 teaspoon coriander seeds and toast them.
  • Now, add the chopped onions to the pan and cook them.
  • Add 14 tsp red chilli powder, 14 tsp coriander powder, 12 tsp cumin powder, 12 tsp salt, finely chopped green chilies, and mashed potatoes when they turn golden. Combine everything thoroughly.
  • Cook for a few minutes after adding 1 tsp finely chopped coriander leaves. Place it in a basin.

Samosa Making

  • Take the dough and divide it in half.
  • Make little balls out of it using your palm, and then flatten the ball.
  • Fill each half with the above-mentioned cooked mixture and seal in a triangular shape.
  • Heat the oil in a pan and add the samosas. Fry them until the outsides are brown and crispy.
  • Serve immediately.
